Identity: It is safe to say that 2011 is one of the great years of Portugal. At the same time a special vintage, the last with our founding partner, winemaker, exceptional human being and great friend, David Booth. Tasting Notes: Concentrated dark violet color. Hot, concentrated and intense nose, notes of blackberries and crushed blueberries, with floral touch and subtle aroma of toasted almonds from the barrel. In the mouth the attack is full, in the middle of the test it is full bodied with firm and very mature tannins. It has a good acidity and the end of the mouth prolongs indefinitely.

Service and Gastronomy: Serve at 16º C and accompany with dishes with roasting notes, such as baked in red meat oven or game, and also combinations of meat with black fruit jams. It also blends fantastically with cheese from the creamy “Azeitão” to a traditional “Roquefort”.

Alcohol: 14.5% / Vol.

Denomination: Regional Wine Alentejo.

Viticulture: Sustainable agriculture, yield is controlled and quality improved with the removal of secondary branches and pruning of bunches. Cachos are harvested by hand for small boxes at the peak of maturity of the tannins.

Vinification and aging: All bunches are selected on a table of choice and subject to strict quality control. Grapes are slightly crushed and gravity-driven for temperature controlled vats. Alcoholic and malolactic fermentations occur naturally without recourse to inoculation. The post-fermentative maceration with the skins lasts for 28 days. Aging for 18 months in new French oak barrels.
