Vinification: The grapes chosen in the Quinta’s vineyard (Cabernet Sauvignon, Merlot and Petit Verdot) benefit from the natural conditions for a slow and balanced maturation. Merlot, the first grape variety to be harvested, enjoyed a slow maturation and was in perfect condition for vinification. Petit Verdot, later caste, is usually harvested before Cabernet. As for Cabernet Sauvignon, its harvest occurred when its bunches of small black berries had good phenolic maturation, good acidity and the desired potential alcohol. The elemental wines were fermented at controlled temperature (25 ° C), followed by a period of “cuvaison” (post-fermentive skin maceration) of one week. Stage: 18 months in new Allier French oak barrels and 12 months in bottle

Tasting notes: Very deep red color, powerful and very concentrated in the nose, with strong notes of red fruits, combined with nuances of coffee, mint and nuts, in a full, complex, fresh and elegant structure.

Gastronomy: Red meat dishes and game.
