Viticulture: The months of maturation in the Alentejo region, southern Portugal are hot and dry, with cold nights. Vines grow on infertile rocky schist soils naturally producing low yields of concentrated fruit. Grape quality is ensured by restricting yields below 7000 kg / ha, using careful vineyard management practices. At harvest the grapes are selected by hand at the peak of ripeness in small boxes.

Vinification: All bunches are inspected at a table of choice before being gently pressed to a low temperature. Suspended solids are naturally deposited on the bottom of the stainless steel vessel prior to fermentation at 12 ° C
